Harvest Monday...

...and I actually have a harvest!


Basil and parsley from the greenhouse and  rosemary and thyme and some baby greens from The Garden.

I added the greens to some purchased spinach (can't wait until mine is ready...a couple more weeks) and made a nice little salad and used the herbs to make Nicoise Chicken with Tomatoes and Black Olives...


This is one of my favorite recipes from one of my favorite cookbooks; The Mediterranean Diet Cookbook.... Amazon has a good price on it but it's also available through most public library systems....( I have a rule; if I've checked it out of the library more than three times it goes on my Amazon wish list)...

 I use chicken thighs instead of breasts, they stay moister in the cooking process, add more herbs than called for and Kalamata olives instead of Nicoise (no pits)....served with some fettuccine and a sprinkle of good Parmesan ... yum!!

  3. I actually have that cookbook (along with about a hundred others). The recipe sounds great. I've been wanting to make a chicken/olive dish and this sounds better than the one I was thinking about. I should be able to use some of our 2010 tomatoes from the freezer. No fresh basil here though. Mine is still waiting in the seed packet to be sown!

    Daphne...thanks, hopefully your beds aren't under too much snow again!

    Villager...aha! Another cookbook addict! Page 316...it really is a great recipe, and better when you have tomatoes out of your garden. The first step sounds strange, cooking the onions and herbs and then setting them aside and adding them back at the end of cooking, but it really makes a difference...the taste much brighter and fresher than if you just leave them in to cook with the tomatoes and chicken (I've cooked it both ways).

    OK...a confession about the basil...I didn't grow it from seed...some of our markets sell basil with the roots still attached...during the winter I buy them and pot them up to stay happy in my greenhouse... ;)

  5. My basil is just tiny at the moment but it will not be all that long before I can make some harvests from it... and this recipe will definitely be on the list of items to give a whirl.
