The garden is producing more than we can eat now so I am busy canning, dehydrating and freezing. Yesterday I pulled some potatoes and carrots to go with our chicken piccata dinner ...
I also pulled a bunch of my chioggia beets ...
and turned them into the prettiest pickled beets I've ever seen :)
I used the recipe on Cindy's (SB Canning) web site for the beets. You can find it here.
Enjoy!
Your carrots are just beautiful!
ReplyDeleteThank you :)
DeleteLooks wonderful! I like how clean and straight your carrots look, and beets are so vibrant!
ReplyDeleteThese are "Mokum" carrots. It's the first time I've grown them. At first I was disappointed with them because they took a long time to size up, but now I love how fat and straight they grow. This one is a keeper.
Deletelovely harvest those beets are so pretty

ReplyDeleteI never used to like beets, but since I've been growing them I have decided that they can be pretty awesome!
